Tunisian chicken tagine

Chicken cut in quarters,

2 onions, 2tbs of olive oil, 8 slices of preserved lemons

¼ tsp saffron, 1 tsp curcuma and ginger, 8oz pitted green olives

2tbs cilantro and parsley, salt and pepper to taste

Over medium heat toss onions in olive oil, add chicken and spices. Add 7oz of water and simmer for 45 minutes. Add olives and slices preserved lemons cut in julienne, cilantro and parsley, salt and pepper. Cook for 15 minutes more
